CHOCOLATE GODDESS BREAKFAST BOWL

I love anything that is served in a bowl with a spoon - so when these breakfast bowls popped up on what's trendy right now - I was delighted!

Here's how you make it:  

SERVES: 2

INGREDIENTS:

  • 1 cup uncooked white quinoa
  • 1 cup unsweetened almond milk, plus more for serving
  • 1 cup coconut milk
  • pinch sea salt
  • 2 Tbsp unsweetened cocoa powder
  • 2-3 Tbsp honey or coconut sugar
  • 1/2 tsp NoMU vanilla extract
  • 3-4 squares Lindt salted dark chocolate, roughly chopped

FOR SERVING:

  • Mixed berries
  • Sliced banana
  • Coconut sugar
  • Hemp seeds or chia seeds

METHOD:

  1. Heat the milks in a small saucepan over medium heat. Once hot, add the quinoa and a pinch of salt, and stir.
  2. Bring to a boil over high heat, then reduce heat to low and cook for 20-25 minutes, uncovered, stirring occasionally.
  3. Once the liquid is absorbed and the quinoa is tender, remove from heat and add cocoa powder, honey (or coconut sugar) and vanilla. Stir to combine.
  4. Add a bit more almond milk if you prefer the texture thinner.
  5. Serve each bowl of quinoa with a small square of dark chocolate, and any other desired toppings (listed above).
