Meringue Frosting is made by whipping egg whites and sugar together to create a light and fluffy frosting. The meringue frosting is used to frost cakes and cupcakes but is also used as a piping to decorate desserts.
Covers 12 -16 cupcakes
INGREDIENTS
3 egg whites
1 cup sugar
½ cup water
Food colouring of choice
METHOD
Place the sugar and water in a saucepan and stir until all the sugar has dissolved
Place on the heat and boil until the sugar to 121°C.
In the meantime beat the egg whites until stiff. Then slowly beat in the hot sugar syrup.
Beat in the food colouring of your choice and use to ice your favourite vanilla or chocolate cupcakes.
