Cool down this summer with a fruity homemade cordial made using fresh granadilla pulp. This cordial makes a wonderfully refreshing drink and if you naughty like me you can add a splash of your favorite spirt and voila you have the most delicious drink to enjoy on a hot summers eve.
NGREDIENTS
- 500g granulated sugar
- 600ml spring water
- 200ml fresh lemon juice
- 500ml fresh granadilla pulp
METHOD
- Place the sugar, water and lemon juice in a saucepan over low heat. Cook, stirring until the sugar dissolves. Increase the heat and bring to the boil. Simmer for 5 minutes or until syrup thickens slightly. Stir in the granadilla pulp. Set aside to cool.
- Strain the syrup through a fine sieve into a jug, pushing the pulp through with the back of a spoon. Discard seeds. Pour the syrup into an airtight bottle and seal. Place in the fridge to chill.
To serve: add the granadilla cordial to taste and top with spring water.
