My favorite part about summer foods is how wonderfully simple they can be and still be packed with flavor. This salad has just the right amount of freshness, zing, texture and color. Serve on its only or as the perfect accompaniment to your summer evening meals.
INGREDIENTS:
1 cucumber
Salt and freshly ground pepper
1 Spanspek
1/2 small red watermelon
100g red cherry tomatoes
100g yellow cherry tomatoes
15g mint leaves
5ml honey
15ml balsamic vinegar
10ml orange juice
45ml olive oil
METHOD:
Peel the cucumber and cut it lengthwise, scoop out the seeds and slice across into crescents approx. 5mm thick. Place in a colander and sprinkle with a little salt. Leave for 15-20 min to drain out some of the juices. Thoroughly rinse and press dry.
Meanwhile, cut melons in halves, remove the seeds and make into balls using a melon baller.
Mix the tomatoes and mint with the cucumber and melon balls in a large bowl.
Whisk together the honey, balsamic vinegar, orange juice and olive oil. Season with a little salt and pepper and use to dress salad. Toss and serve.
