A quick and easy, fresh and tasty Asian noodle salad.
Serves 1
INGREDIENTS:
1 packet of 2 minute noodles
50g mange tout
2 spring onions, finely sliced
¼ red onion, finely sliced
1 clove of garlic, crushed
1 red chilli
45ml soy sauce
1 lime, juice and zest
Sesame oil
METHOD
Cook the 2 minute noodles according to the packet instructions.
Blanche the mange tout in boiling water and set aside.
Heat a medium frying pan with a splash of sesame oil and flash fry the red onion.
Add the garlic, chilli and spring onion. Fry for 1 minute and then add the soy sauce and lime juice and zest.
Reduce by half and pour the soy mixture over the noodles. Add the mange tout and enjoy!
