You know when you wear a dress you found on sale and just glam it up with a good pair of heels and some accessories and then everyone says you look like a million bucks… well this is kind of the same thing. Buy a ready made curry, “dress” it up and pretend you spent the whole day in the kitchen.
Serves 1
INGREDIENTS
1 ready made curry to serve 1 (with rice, heated according to instructions)
For the salsa
¼ punnet Rosa tomatoes, quartered
5ml coriander, finely chopped
1 baby spring onions
1/8 red onion, finely chopped
1/2 red chilli, deseeded and finely chopped
5ml olive oil
15ml lemon juice
For the raita
75ml yogurt
25ml tangy mayonnaise
¼ cucumber,quartered length ways and finely sliced
1 clove garlic, crushed (use more if you like garlic)
5g mint, chopped
Salt and pepper
Poppadoms, rotis, naan breads (optional)
METHOD
Mix the salsa ingredients and season with salt and pepper.
Mix the yogurt, mayo, cucumber and garlic together. Season well with salt and pepper. Add the mint just before eating.
Serve the heated curry and rice with the sambals and if you like - poppadoms, rotis or naan bread.
