I love this fresh and fruity summer salad. The freshness, sweetness and acidity of this salad makes it a perfect side to any fish dish or braai.
Serves: 2
INGREDIENTS:
2 pears
1 good sized fennel bulb
3 large radishes
Small handful of wild rocket
DRESSING:
70ml extra virgin olive oil
5ml Dijon mustard
30ml white Balsamic vinegar
10ml honey
Salt crystals and cracked black pepper
METHOD:
Slice the pear, fennel and radishes as thinly as you can. Mix all the ingredients for the dressing together and pour over the sliced fruit and vegetables. Allow to stand for 10 minutes before assembling and serving. Serve stacked with wild rocket.
Season with salt crystals and black pepper to taste.
