These delicious Strawberry Smoothie cupcakes are so quick and easy to make. I love them as I have all the ingredients in my pantry so when I decide to make them with my girls the only thing we need to buy is the smoothie mix.
Makes 16 cupcakes
INGREDIENTS
CUPCAKE:
½ cup butter
1 1/3 cups castor sugar
2 large eggs
1 tsp vanilla
2 ¼ cups flour
3 tsp baking powder
½ tsp salt
1 cup strawberry smoothie
ICING:
175g butter
350g icing sugar
½ tsp vanilla
3 tbsp milk
1 punnet strawberries to decorate
METHOD
CUPCAKE:
Preheat oven to 180°C.
Cream butter and sugar together until pale and fluffy. Slowly add the eggs, then beat in the smoothie and vanilla.
In a separate bowl sift the dry ingredients together.
Combine dry ingredients with the creamed mixture, and fold together gently.
Spoon into paper cupcake cases until ¾ full.
Bake for about 20 minutes. Remove from oven and cool completely before icing.
ICING:
Cream butter and vanilla.
Beat in the icing sugar bit by bit, adding milk whenever the mixture becomes too thick.
To assemble the cupcake:
Spread the icing on top of the cupcake and decorate with the fresh strawberries.
